Carrot Nutrition
Carrots are popular for the sweetness and crunch. They make an excellent hot or cold soup and delicious juices, either plain or mixed with orange or pineapple juices. They are also a favourite in raw salads, stews and stir-fries and make excellent crudités vegetables with dips.

Carrots are best known nutritionally for their high concentration of the vitamin A precursor, beta-carotene, the antioxidant that gives them their distinctive orange glow and its responsible for most of the health benefits of carrots.

Carrots have the highest carotenoid content of any vegetable and one serving contains more than 500% of the recommended daily allowance of vitamin A. They are also an excellent source of fibre, particularly soluble fibre. Carrots also contain Vitamin C and potassium. Carrots are also a significant source of carbohydrate energy.

Health Benefits of Carrots
Health benefits of carrots include the promotion of good vision and prevention of night blindness, cancer prevention, heart disease protection and healthy lungs.

Carrot Helps Promote Eye Problem
Promotion of good vision and prevention of night blindness is the great healing work that carrot does.
Carotenoid in carrots helps promote good vision and are particularly good for boosting night vision.

Beta-carotene has the potential to be converted to vitamin, which helps with the production of rhodopsin, the night vision pigment in the retina of the eye.

Carotenoids have been found to offer protection against certain cancers, namely bladder, cervix, colon, prostrate and lung cancers.
Carrots may be particularly beneficial against colon cancer, due to the high presence of soluble fibre in carrots, which helps mop up carcinogens in the gut. Carrots also contain an antioxidant called falcarinol, which has been to help shrink precancerous lesions in the colon.

Beta-carotene has been shown to help protect the lungs from disease and studies have shown that people with emphyseama have vitamin A deficiencies.

Special Notes
Eating high concentrations of beta-carotene, from carrot juice for example, can lead to a condition called carotenemia, or high blood carotene levels. Carotenemia can turn the skin, especially on the palm of the hands, a bright orange colour. It is not known whether carotenemia carries any risk, but is probably harmless and disappears once beta-carotene intake is decreased again.
